QEST supported Charlotte as a chef on the James St. South Apprenticehip Programme in Belfast. This small restaurant group and cookery school founded by Niall McKenna was struggling to find quality people for its kitchens and so they decided to train their own skilled, motivated chefs in house.
Charlotte was cooking with head chef David Gillmore and his team, as well as studying for a professional cookery qualification at Belfast Met and meeting producers. James St. South guaranteed Charlotte a full time job on completion of her year long training. She has progressed from Commis Chef to Chef de Partie and hopes to run her own kitchen one day.
